St David’s Day tips

With heritage and provenance at the forefront of people’s minds when selecting the best foods to eat. Welsh food has never been so popular so what better way to celebrate St David’s Day than trying some favourite Welsh recipes.

There is no single food particularly associated with St David’s Day but it’s a great excuse to create a Welsh fest featuring the very best of Welsh foods.

Dragon Welsh Cheese is unique in that it can be used to create a full Welsh menu and be included in all courses. Dragon Cheese is made with our own Welsh milk using traditional cheese making techniques and vary from young, mild cheddars through to a vintage cheddar that is matured for up to 24 months. The wide choice of cheese ensures that our entire range is versatile and can be used in a wide selection of dishes. For St David’s Day we decided to offer some inspiration to create the perfect Welsh menu that include Welsh menu starters, Welsh main courses and of course a Welsh cheeseboard to finish.

To finish:

Create an impressive cheeseboard with an array of Dragon cheeses. It’s important to offer a wide variety of cheese, so here are some ideas of what to include for the perfect cheeseboard:

Dragon Cavern Cheddar has been developed in partnership with Llechwedd Slate Caverns to add a real depth of flavour to our Welsh Cheddar. The cheese is made to a special bespoke recipe and matured to a minimum of 11 months. It is then transported from the Creameries to the Slate Caverns in Blaenau Ffestiniog and left to age 500 feet underground. This traditional ageing process takes place in original mining caverns which have been converted into cheese caves. This process adds unique characteristics to the taste and texture of our cheese.

Dragon Caerphilly is a traditional Welsh cheese with a crumbly texture and a mild slightly lemony flavour.

Dragon Vintage Cheddar with Leek is a true taste of Wales. Made with Welsh milk the cheese is matured to give a good, robust flavour and the addition of the Welsh national emblem leek provides an oniony tang that perfectly complements the savoury cheddar.

As well as a good selection of cheese, it’s important to remember the accompaniments, so Dragon Butter is essential along with plenty of savoury biscuits and crackers, fruits such as figs and grapes and also nuts to add texture.
