Cheese and Wine tasting

We had the pleasure of visiting Dylan and Llinos at Gwin dylanwad Wine in Dolgellau to pair our cheese with their wonderful selection of wines.

When you think about ‘cheese and wine’ you probably instantly think of Red wine, but this isn’t always the best wine option for cheese.

We decided to pair up our cheese with some of their wine, here’s the result:

Mild Cheddar and Caerphilly paired with Sauvignon Blanc

The dry white wine matches the acidity of the Caerphilly and the creaminess of the mild but doesn’t overwhelm the taste

Red Leicester + Double Gloucester paired with Rose Wine

The slight acidity of the rose cuts through the cheese but doesn’t kill the flavour of the Double Gloucester. Red Leicester has a slightly nuttier flavour but the rose is strong enough to match

Caerphilly & Cranberries paired with Beaujolais

The Powerful sweet cheese with a slight sourness from the Cranberries complemented the light, fruity Beaujolais. The Sweetness of both the cheese and wine match beautifully

Cavern Aged Cheddar paired with Tawny Port

Our Cavern Aged cheddar is matured at South Caernarfon Creameries for 11 months before being transported down to Slate Caverns in Llechwedd, Blaenau Ffestiniog.

The Sweetness of the Tawny Port matched the rich, ripe and ready creamy cheddar

Vintage Cheddar paired with Bordeaux

The Sharpness of the Vintage cheddar paired well with the soft, easy drinking creamy claret

Mature Cheddar paired with Bordeaux

The sweet, soft dark fruit matches the creaminess of the Mature cheddar

Vintage Cheddar with Leeks paired with Merlot

We initially tried the Beaujolais with the Vintage cheddar and leeks but found that it was overpowered by the cheese. The Merlot was a stronger, sweeter match that complemented the powerful cheese perfectly.
