Welsh Slate Cavern Aged Cheddar
This cheese isn't new to use, but has been added as part of the Handcrafted range as it's special!
Story: Our Welsh Slate Cavern Aged Cheddar is made to a bespoke recipe and matured for 11 months at the creamery before further ageing deep underground at Llechwedd Slate Caverns, Blaenau Ffestiniog.
Tasting Notes: This traditional process gives our cheddar a firmer body with a smooth texture and a real depth of flavour with rich savoury, flint notes.
Serving Suggestion: Delicious with crusty sourdough bread and chutney with salted Dragon Welsh butter
Perfect Pairing: Craft Welsh Ale
Welsh Slate Cavern Aged Cheddar with Penderyn Whisky
Story: Made to a bespoke recipe and matured for 11 months at the creamery before further ageing deep underground at Llechwedd Slate Caverns. The cheese is then infused with Penderyn Welsh Whisky
Tasting Notes: Savoury cheddar with subtle notes of whisky and a slightly crumbly texture.
Serving Suggestion: Great for a special occasion cheeseboard or a treat melted over a crumpet.
Perfect Pairing: Try with a glass of Madeira or Penderyn Whisky.
Maple Smoked Mature Cheddar
Story: Caerfully selected Mature Welsh Cheddar that is cold smoked over Maplewood chips. The smoking is done slowly by hand in small batches at Halen Môn cool smoker on the beautiful island of Anglesey.
Tasting Notes: Delicate smoky notes with a real savoury edge, amber brown crust where the smoke has infused into the cheese.
Serving Suggestion: Try melted over your favourite burger or chicken breast.
Perfect Pairing: Medium dry Welsh cider
Halen Môn Sea Salt Cheddar
Story: Halen Môn is based on beautiful Anglesey where their salt it harvested by hand and is very pure sea salt. The cheddar is made to a bespoke recipe using the pure Halen Môn sea salt.
Tasting Notes: Halen Môn sea salt adds a unique, rich mineral flavour to our cheese enhancing the savoury umami notes, whilst retaining our distinctive creamy texture. The characteristics of Halen Môn, its slight sweetness, minerality and clean brininess, shine through the cheese.
Serving Suggestion: Divine on its own as a snack and delicious thinly sliced over a tomato salad.
Perfect Pairing: Crisp white wine such as Chardonnay or even a dry Prosecco.
