Cavern Cheddar Baked Woodland Mushrooms

Step by Step

Recipe Ingredients
400g mixed mushrooms of your choice (portabella, shitake, chestnut)
125g grated cavern cheddar
1 clove garlic crushed
75g finely diced pancetta
Fresh thyme leaves
Olive oil
20g Dragon butter
Aged balsamic vinegar
Recipe Directions
Sauté the pancetta until cooked through and beginning to brown
Set aside
Using the same pan sauté the mushrooms in oil with garlic and Dragon butter until cooked through
Add pancetta, thyme and grated cheddar and continue to cook until the cheese has melted and beginning to brown
Serve immediately over cooked fresh pasta or on its own with crusty bread
