Cheddar & Apple Muffins

Cheddar & Apple muffin

Step by Step

Recipe Ingredients
175g self-raising flour
100g yellow cornmeal
1/2 tsp. baking powder
115g Dragon salted butter, softened
175g soft brown sugar
2 eggs beaten
6 Tbs. milk
150g Dragon mature cheddar, grated
1 large apple peeled, cored, and grated
Recipe Directions
Preheat the oven to 180C/350F/Gas mark 4
Place 12 muffin cases on a muffin tray
Sieve the flour and baking powder into a medium mixing bowl stir in salt and cornmeal
Place the butter and sugar in a large mixing bowl and beat with an electric hand mixer until light and fluffy
Gradually add the eggs, scraping down the sides of the bowl after each addition.
Add approximately half of the flour mixture. Stir in the milk followed by remaining flour mixture gently whisk until mixed through.
Fold the grated cheddar cheese and apple through until completely mixed in
Place mixture in muffin cases and bake until golden brown and cooked through
When completely cold store muffins in airtight container
