175g self-raising flour |
100g yellow cornmeal |
1/2 tsp. baking powder |
115g Dragon salted butter, softened |
175g soft brown sugar |
2 eggs beaten |
6 Tbs. milk |
150g Dragon mature cheddar, grated |
1 large apple peeled, cored, and grated |

Preheat the oven to 180C/350F/Gas mark 4 |
Place 12 muffin cases on a muffin tray |
Sieve the flour and baking powder into a medium mixing bowl stir in salt and cornmeal |
Place the butter and sugar in a large mixing bowl and beat with an electric hand mixer until light and fluffy |
Gradually add the eggs, scraping down the sides of the bowl after each addition. |
Add approximately half of the flour mixture. Stir in the milk followed by remaining flour mixture gently whisk until mixed through. |
Fold the grated cheddar cheese and apple through until completely mixed in |
Place mixture in muffin cases and bake until golden brown and cooked through |
When completely cold store muffins in airtight container |
