Cheesy Dauphinoise Potatoes and Mushrooms

Step by Step

Recipe Ingredients
For the Dauphinoise
4 large potatoes (Marabel or Maris Piper)
100ml Double Cream
Salt and Pepper
50g-100g Dragon Vintage Cheddar (You can use a milder cheese if you prefer)
2 Garlic cloves (Finely chopped)
Butter for ramekins
For the Mushrooms
2 Large Portobello Mushrooms
Dragon Vintage and Leek Cheese
Recipe Directions
For the Dauphinoise
1. Use a Mandolin slicer to slice your potatoes thinly. Then peel and chop two garlic cloves finely.
2. Grate or crumble Dragon Vintage Cheddar and place in a bowl
3. Butter the bottom and sides of two small oven safe ramekins.
4. Layer your potato, cheese, garlic, salt, pepper along with a splash of cream in the ramekins and repeat until full. (We recommend using the cheese every other layer for bursts of flavour)
5. Add some extra cheese on the top.
6. Place the full ramekins on a baking tray and bake in the oven at 200˚c for around 20 minutes until golden brown and cooked through.
For the Mushrooms
1. Peel mushrooms.
2. Add Dragon Vintage and Leek cheese to your hearts content.
3. Bake on baking tray until the cheese is golden brown
4. Enjoy!
