Step by Step

Recipe Ingredients
180g Caerphilly (Wensleydale can be used) grated or finely crumbled
2 tablespoons dried cranberries or sundried tomatoes marinated in 2 tablespoons gin for half an hour
2 heaped tablespoons cream cheese
1 teaspoon caster sugar
Pinch cinnamon (to go with cranberries) or a handful of walnuts (to go with sundried tomatoes)
Recipe Directions
• Beat together the Caerphilly, cream cheese, sugar and cinnamon until smooth
• Add the excess gin from the cranberries and mix well
• Fold in the cranberries and spoon into a serving dish
• Press down well and decorate top with cranberries or walnuts
• Serve!
