Step by Step


Recipe Ingredients
50g mincemeat
100g Cranberry & Caerphilly crumbled into small chunks
Pinch of cinnamon
Tablespoon chopped hazelnuts or pumpkin seeds
3 sheets of filo pastry
40g butter, melted, for brushing
36 chives, to decorate (optional)
Recipe Directions
Preheat the oven to 200°C/fan 180°C/gas mark 6.
Place the Caerphilly into bowl, sprinkle on cinnamon then add mincemeat and combine well
Add chopped hazelnuts or pumpkin seeds
Layer 3 sheets of filo pastry together brushing each layer with melted butter. Cut sheets in half lengthways, then cut into 8 rectangles. Place 1 tsp of the filling towards one long edge of rectangle, then roll up the pastry. Pinch the ends to form a cracker shape.
Repeat until all crackers are made. Place crackers on a baking sheet lined with baking
parchment, brush with remaining butter and bake them for 15 minutes until golden. Dust with icing sugar to serve
