Recipe Ingredients
2 medium sized sweet potatoes and 1 large parsnip peeled, cooked and mashed
150g grated mature cheddar
100g Cashew nuts roasted and finely chopped
50g Roasted chopped almonds or hazelnuts
1 large onion finely chopped and sautéed until brown
50g Pumpkin seeds
30g sunflower seeds
2 large eggs beaten
1 tablespoon chopped fresh parsley
1 dessertspoon chopped fresh sage leaves
Freshly ground black peppers
Sea salt
Large loaf tin well-greased and base lined with greaseproof paper
Recipe Directions
• Place all ingredients except eggs into a large mixing bowl and season to taste
• Beat in eggs ensure it is mixed thoroughly
• Spoon the mixture into the tin and press down firmly
• Bake at 180c for 50 mins until cooked through
