Potted Cheddar with Welsh Ale and Mustard

Recipe Ingredients
250 Dragon cheese, chopped
150g salted butter
30ml Welsh ale
1tbsp wholegrain mustard
Recipe Directions
Combine the chopped cheese, 100g of butter and Welsh ale in a food processor. Blend the mixture until creamy.
Stir in the wholegrain mustard.
Pack the mixture tightly into ramekins or ceramic pots – be sure to press down to eliminate any air pockets.
Melt the remaining 50g butter and leave to sit for a few minutes for the fat to separate from the milk solids.
Pour the clear fat over the cheese – leaving the milk solids in the pan.
Chill in the refrigerator for a few hours until the top has hardened.
