Spicy Cheddar & Leek Croquettes

Step by Step

Recipe Ingredients
4 spring onions very finely chopped
4 tablespoons mashed potato
90 g Vintage Cheddar & Leek grated
Dash Tabasco sauce
100g panko breadcrumbs mixed with a teaspoon of smoked paprika
2 tablespoon flour with pinch of chilli powder
Spray olive oil
Beaten egg with pinch salt
Recipe Directions
Mix together the mashed potato, spring onions and cheese, add tabasco sauce to taste
Roll into even sized bite sized balls and set aside
Prepare 3 separate plates for coating croquettes: flour with chilli, beaten egg and breadcrumbs lightly sprayed with olive oil
Roll each ball in flour, then egg and lastly breadcrumbs
Place on a baking sheet covered with baking parchment to prevent sticking
When all balls prepared lightly spray with olive oil and bake in hot oven 180 gas 6 for approx. 15 mins until golden brown and hot
Croquettes may split but still delicious!
Serve with a sweet chill dipping sauce
